Coffee shop, thrift store to open in Marshall Square Mall in place of Follett’s

Cafe Kubal, a coffee and pastry shop recognized for its fresh-brewed, pour-over style coffee, is expected to open at Marshall Square Mall Aug. 20.

The cafe is already under construction, and will replace Follett’s Orange Bookstore, which closed Feb. 24.

The shop is in collaboration with the Rescue Mission, which will be opening a hip, urban-style thrift store in the same space, combined with the coffee shop.

“It will be a different take on thrift store,” said Cafe Kubal’s owner, Matt Godard. “It has a kind of decked-out, urban look and feel, and the decor of the store will influence the items selected to be sold.”

The cafe itself will be built almost entirely out of refurbished items and materials from the Rescue Mission’s warehouse,Godard said.



Cafe Kubal is known for its freshly-ground single-cup coffee, made brewed to order.

“We use an old-school, throwback method with modern adaptations that you can’t find anywhere else,” Godard said.

The cafe also serves homemade food and pastry items, among them its individual quiches, he said. Food items are made seasonally fresh every morning, which Godard said are “great things to grab.”

Godard said he decided to open up the cafe at Marshall Square Mall because of all the “coffee drinkers available.”

“In my understanding, that area is underserved,” he said. “If you want to get a cup of coffee you have to wait forever and there’s no place to sit, so that led me to the conclusion of opening up there.”

Cafe Kubal already has two Syracuse locations on James Street and South Salina Street.
